Give your body a refreshing and balanced meal with this light cucumber salad. Cucumbers are actually classified as fruit, though they’re not often recognized as such because they are not very sweet. With a crisp, mild flavor, they’re reliable sources of vitamin C, vitamin K, and potassium. Cucumbers are great to eat raw and contain more nutrients than pickles. Make the most of remaining summer days with cool salads that are healthy, delicious, and easy on your conscious.
1 large cucumber, peeled and thinly sliced
1 Tbs. coconut milk or unsweetened soymilk
1/4 cup red wine vinegar

Research
reveals that drinking fruit and vegetable juices frequently
may delay the onset of Alzheimer's disease. The 10-year
study, recently published in The American Journal
of Medicine, examined nearly 2000 subjects. The
researchers discovered that the risk for developing
Alzheimer's disease was reduced by 76% for individuals
who drank fruit and vegetable juices more than 3 times
per week, compared with those who drank juices less
than once per week. A lower reduction (16%) was obtained
for juice consumption once or twice per week.
While past studies have linked fruit and vegetable consumption with protection against the degenerative disease, this study is the first to examine juices as a preventative measure. Researchers note that high antioxidant content found within plant-based foods play a crucial role in protection against Alzheimer’s disease. Look for 100% fruit and vegetable juices, rather than added sugar blends.
