Veggie-Oat Cakes

Oats are great tasting and great for you! They have a unique protein source that the World Health Organization reported to be of equal quality to meat, milk, and egg protein. Just one cup of whole grain oats has 26 grams of protein and 17 grams of fiber, which has been proven the beneficial effects on cholesterol levels. Oats are rich in B vitamins and minerals, calcium, magnesium, iron and zinc. A nice alternative to crab cakes, these Veggie-Oat cakes are excellent served with spicy cocktail sauce or Vegenaise (see product below).

Ingredients:

2 slices whole wheat bread, torn into large pieces
1/2 cup celery, minced
1 large onion, chopped
2 carrots, minced
1/2 green pepper, minced
1/4 cup parsley, chopped
16 oz. firm tofu
2/3 cup oatmeal, quick
1-2 Tbs. Old Bay seasoning
1 tsp. nori or other flaked sea vegetable (optional)

Directions:

  1. In a food processor or blender, whirl bread pieces into fine crumbs; place on a pan and toast for 8-10 minutes, until dried and toasty. Remove from oven and set aside.
  2. Sauté celery, onion, carrot, pepper and parsley until softened (about 5 minutes).
  3. In a large bowl, combine tofu, sautéed vegetables, oatmeal, and seasonings. Mix well.
  4. Using about 1/4 cup for each, form mixture into about 15-20 patties approximately 2" across and 1/2" thick. Coat each side of the patties with breadcrumbs and place on a nonstick baking sheet.
  5. Bake at 350°F for 15 minutes; carefully turn cakes over and bake until second side is toasty and browned (about 15-20 minutes).

Whole Grains Help Weight Loss

According to a recent study published in the Journal of the American Dietetic Association, eating a reduced-calorie diet and high-fiber whole-grain cereals can help with weight loss. The 6-month study followed 180 overweight sedentary adults. Those who ate whole-grain cereals had a lower intake of saturated fat and high intake of fiber, magnesium and vitamin B-6, indicating use of high-fiber whole grains deliver a better profile of nutrients.

In an effort to lose weight, many people avoid carbohydrates-based foods such as cereals as they believe using grain products could counteract their weight loss effort. However, previous studies by other researchers have already showed eating grain products is not responsible for the obesity epidemic in the US.

Dr. T. Colin Campbell, a retired nutrition professor from Cornell University, said in his book China Study that the Chinese people in rural areas eat more grain products and even more calories, but they have much lower incidence of obesity." His findings suggests the cause of obesity in the West might be high intake of fat and animal proteins.
