Savory Pot Pie

Thanksgiving is a time to celebrate with family and friends and to share good food! Show your loved ones the superior taste and nutrition of compassionate cuisine by making an amazing meat-free meal. This Savory Pot Pie, featuring a thick, creamy sauce and hearty vegetable filling, will be a definite crowd pleaser. Try this and other great veg recipes for a Gentle Thanksgiving.

Ingredients:

4 Tbsp. vegetable bouillon
2 1/2 cups hot water
1/2 cup flour
1/2 cup oil
1 tsp. garlic salt
1/2 tsp. pepper
2 small white potatoes, cooked and cut in small pieces
1 1/2 cups cooked mixed vegetables, like corn kernels, peas, and diced carrots
1/2 lb. mock "turkey," cut into tiny cubes*
1/2 cup nutritional yeast flakes (optional, for flavor)**
1 box puff pastry sheets for 9"

** Not to be confused with brewer's yeast, nutritional yeast can be found in the bulk aisle of natural food stores.


Directions:

  1. Mix vegetable bouillon with hot water to make a stock. Set aside.
  2. Combine the nutritional yeast and flour in a large pot and stir constantly over low heat until lightly toasted; add the oil, stirring to make a roux. Slowly whisk in the stock, garlic salt, and pepper; add vegetables and mock "turkey;" cook for 5- 10 minutes.
  3. Roll out one sheet of puff pastry and place it in a 9-inch pie dish, trimming to fit. Place the pastry in the oven at 400°F for 5-10 minutes or until it starts to puff.
  4. Remove pastry from oven, pour filling into it, and place the other sheet of puff pastry on top, cutting and pressing together the edges; make several 1-inch slices on top.
  5. Continue baking for approximately 20 minutes or until the pastry is golden and puffed.

Heart Disease Risk in Low-Carb

Low-carb diets containing fat and protein, do not seem to affect the risk of heart disease in women, as showed in a issue of the weekly New England Journal of Medicine.

However, women who choose fat and protein from vegetable sources show a 30 percent lower risk of heart disease, according to researchers from the Harvard School of Public Health, who analyzed data collected over 20 years from more than 82,000 women participating in the famed Nurses' Health Study.

Thanksgiving with Kindness

Shemirah Brachah and her daughter Michelle Johnson jump on every opportunity to educate others. In an effort to share their vegan lifestyle with community members, they started the Ful-Mont Veg group.
