Roasted Red Pepper Spread

Looking for creative dishes for your get-togethers? Try this Roasted Red Pepper Spread, a tasty variety of Hummus. It is terrific served with toasted french bread, pita, or crackers for a festive treat. Bell peppers are high in vitamin A and C, two very powerful antioxidants. Beautiful as a garnish, vibrant bell peppers can enhance your food platters. Enjoy their bright colors!

Ingredients:

2 16-oz cans garbanzo beans, rinsed & drained
1/2 cup lemon juice
2 6-oz jars roasted red peppers, drained
1/4 cup tahini*
1 Tbs. onions, minced
3 garlic cloves, minced
2 Tbs. parsley, chopped
2 tsp. smoked paprika
1/8 tsp. white pepper
1/8 tsp. cayenne pepper
1/2 tsp. salt
2-4 Tbs. olive oil

* Tahini is a calcium-rich, creamy paste made from ground sesame seeds.

Directions:

  1. Combine all ingredients in food processor or blender.
  2. Blend until mixture is fairly smooth, adding oil as needed for desired consistency.
  3. Place in serving bowl, cover, and chill for 2-3 hours before serving.
  4. Garnish with fresh herbs, olives, paprika, or bell peppers.

Vitamin C Benefits

The latest reports of an ongoing study reveal that getting plenty of vitamin C may lower risk for stomach cancer. The study also indicated that vitamin C may play an important role in protecting against the cancer risks associated with diets high in meat.

The study, called the European Prospective Investigation into Cancer and Nutrition (EPIC), is the most comprehensive study of diet's role in cancer risk ever undertaken. Researchers initiated it in 1992 and are currently tracking the diets and disease rates of more than 500,000 individuals in 10 European countries.

Stomach cancer is hard to detect and strikes more than 22,000 Americans annually. This study offers further evidence that people should regularly consume a variety of fruits and vegetables. Vitamin C rich foods include citrus fruits, melons, spinach, lettuce, kale, sweet potatoes, carrots, yams, parsnips, artichokes, broccoli, brussel sprouts, cabbage, tomatoes, and bell peppers.
