Cherry-Almond Hearts

Have fun in the kitchen and impress your loved ones with sweet, decorative treats. These Cherry- Almond Hearts feature fresh cherry jam that’s perfectly surrounded by a tasty sugar cookie crust. Crisp and light, these cookies will be sure to make your sweetheart swoon!

Ingredients:

1/2 cup almonds, toasted and finely ground
1 cup whole wheat pastry flour
1/2 tsp. baking powder
1/8 tsp. salt
2 Tbs. light almond or canola oil
2 Tbs. maple syrup
2 Tbs. molasses
1/2 tsp. vanilla
1/2 tsp. almond extract
1/2 cup natural cherry jam
1/8 cup powdered sugar

Note: You will also need one 3-inch and one smaller heart cookie cutter; if unavailable, any other cookie cutters will do.

Directions:

  1. Mix together first four ingredients.
  2. In a separate bowl, stir together remaining ingredients (except for jam and powdered sugar).
  3. Add dry ingredients to wet ingredients (note: if this is too sticky, slowly add more flour).
  4. Roll out cookie dough to approximately 1/8" thick or less between sheets of waxed paper.
  5. With 3-inch cookie cutter, cut out hearts and transfer to the baking sheet; with the smaller cutter, cut a small heart out of the middle of half of the cookie shapes.
  6. Bake at 350 degrees on lightly oiled baking pan until cookies are very lightly toasted along the edges, approximately 7-12 minutes.
  7. When cool, spread about 2 tsp. of jam on a heart cookie, then place another on top of it.
  8. Sprinkle with sifted powdered sugar and enjoy.
