Celebrate Cinco de Mayo with something special! Invite your friends and family to enjoy some homemade enchiladas for a fiesta. Enchiladas are a traditional Mexican dish;
the name is a derivative of "enchilar,” which
means “to add chile pepper.” This dish
is high in flavor, low in calories, and rich
in healthy protein. Arriba Mexico!
Ingredients:
12 small corn or 8 medium sized flour tortillas
1 large can of prepared enchilada sauce
1 can
(15 oz) stewed tomatoes
1 15 oz can of black beans, drained & rinsed
1 cup frozen corn
1 cup fresh mushrooms, quartered
2 medium onions, cut into chunks
½ cup black olives, diced
¼ cup green onions, chopped
salt & pepper (to taste)

Recent
study results indicate a link between eating processed
meat and the incidence of lung disease. Researchers from Columbia University in
New York found a statistical link between eating a
diet heavy in cured meats (hot dogs, deli meats and bacon)
and chronic lung disease, which can involve chronic
emphysema, bronchitis or asthma.
The study examined diet and lung function of more than 7,000 participants averaging 65 years of age. Individuals who ate more than 14 servings per month of processed meats had 80% increased risk of developing chronic lung disease compared to people who didn’t eat processed meat at all.

Eleanor
Pretzer demonstrates that no matter what age you
are, you can make a difference for the animals! Recently
celebrating her 100th birthday, she decided to take
the opportunity to raise funds for animals in need.
Rather than buying gifts, she asked her friends and
family to make donations
to a shelter for abused and abandoned animals in
Southwest Florida.
"I'm 100 years old, I don't need too many dresses," she said, but don’t fool yourself by her age, since she goes to the Suncoast Humane Society regularly, where she visits every animal. She understands that animals want attention and love, and she gives all the cats a chance to sit on her lap. Her granddaughter says that Eleanor has always given to good causes, and even though she is on a limited income, she still gives by donating her birthday gifts.
