Kiwi-Banana-Cranberry Tart

Kiwi is packed with more vitamin C than an equivalent amount of orange! This tropical fruit provides essential nutrients and vitamins to keep you healthy and energetic. Available year-round, Kiwi is chock full of antioxidants and a good source of fiber and potassium.

Ingredients:

1 cup vegetable shortening
3/4 cup water
1 1/2 tsp. almond extract
2 cups flour
1/4 tsp. salt
3 tsp. water
bananas
kiwi slices

Cranberry Filling:
1 bag (12-oz) cranberries washed & picked over
1/4 cup water
2 cups sugar
1/2 box pectin

Directions:

  1. Beat together shortening, sugar, and almond extract until just mixed; add salt and flour and mix. Dough will be crumbly.
  2. Mix in 3 tsp of water. Dough will still be crumbly, but will hold together when pinched.
  3. Divide dough in half and press into two 8 inch cake pans; press dough evenly into pans (about 1/4 inch thick and 1/2 inch deep).
  4. Bake at 325 degrees for 25-30 minutes and let them cool completely.
  5. Mix water and cranberries together in a saucepan and cook about 2 minutes, until the water heats; add sugar and cook, stirring, over medium heat until skins split and fruit begins to soften (about 10 minutes).
  6. Mash fruit; add pectin and bring to a rolling boil, then reduce heat and simmer until liquid jellies on the spoon (about 3 minutes). Remove from heat and cool.
  7. Slice banana about 1/4 inch thick and line shells. Spread cranberry filling over bananas and arrange kiwi slices on top.

Fruit for a Better Heart

High consumption of fruit decreases cardiovascular risks associated with obesity, according to research undertaken at the University of Navarra in Spain. The study, published in the scientific journal Nutrition, revealed that antioxidants present in fruit improve heart health.

The research focused on evaluating the capacity of low-calorie diets enriched with different quantities of fruit. Researchers monitored obese women between 26 and 38 years of age over a period of eight weeks. The participants who consumed the most fruit had a significant reduction in free radicals within the body, which can contribute to the development of cardiovascular diseases. Antioxidants, which naturally cleanse the body of free radicals, can be found in a wide variety of fruits and vegetables.

Inspiration
Class Act

Axel Johnson is an 11-year old inspiration! A vegan since birth, he always takes time to speak out on behalf of the animals. After recently watching the animal rescue documentary, Behind the Mask, he decided to take more action. He began informing his fifth grade classmates about the suffering animals endure on factory farms, slaughterhouses, and in laboratories. In order to educate them more extensively, he spoke with the school principal and arranged for his grandma (and FARM’s Campaign Assistant), Shemirah Brachah, to speak to his class.

Shemirah spoke to 40 children about the choice to be vegan and the many reasons behind it. Axel’s classmates asked a variety of questions and held a discussion about the topic. The grandma-grandson team then offered vegan food samples, vegetarian starter guides, and stickers.

Shemirah will also be working on the Animal Rights 2007 National Conference this July.
