Protein-Packed Lasagna

Want to impress your meat-loving friends with a protein-packed meal? Wow them with this amazing spin on a dish everyone loves… lasagna! This Protein-Packed Lasagna features some of the best meat-alternatives on the market. Made with fusilli (spiral-shaped pasta), it's easy to prepare, fun to assemble, and guaranteed to please even the sassiest cynics in the crowd. Feel free to add a personal touch with your favorite herbs and spices.

Ingredients:

1 package (16 oz.) fusilli pasta
1 jar (32 oz.) spaghetti sauce
¼ package Morning Star crumbles
10 oz. Follow Your Heart mozzarella, shredded
½ package Nate’s Meatless Meatballs
1 package Extra Firm Tofu, crumbled
olive oil spray
salt & pepper (to taste)

Directions:

  1. Boil water and cook pasta according to directions; drain and set aside.
  2. In a saucepan, heat tomato sauce and add crumbles; stir over low heat for five minutes.
  3. In a separate bowl, combine cooked pasta with half of the prepared sauce.
  4. Spray olive oil on the bottom of a large baking pan, layer pasta, crumbled tofu, and top with the remaining tomato sauce.
  5. Cut "meatballs" in half and place on the top layer.
  6. Add final layer of shredded mozzarella and spray with olive oil (helps melt the cheese); cover with aluminum foil.
  7. Bake for 35 minutes at 400F or until the mozzarella melts.

Soy Fights Breast Cancer

Breast cancer is the second most common cancer among women. New research from experts at the National Cancer Institute suggests that eating soyfoods as a child and teenager may be a way to prevent breast cancer.

In this study, Asian women in California who consumed higher amounts of soy between the ages of 5 and 11 were 58% less likely to develop breast cancer, as compared to Asian women who consumed less soy during this period of their lives. The results are similar to those from the book China Study, which revealed that girls who had high soy intake between the ages of 13 and 15 were half as likely to develop breast cancer later in life.

A 2006 issue of Time magazine recommended that women who have a family history of breast cancer ought to introduce their kids to soyfoods as early as possible. Substituting soymilk for cow’s milk is one way to start. The same thing will be shown to hold true for boys: a similar diet may lower their future risk of prostate cancer.

René Rowland is a Los Angeles-based musician and artist who's been rescuing dogs for 2 years. When two dogs were abandoned near her home, René and her husband Jim took them in and began to network online in an effort to find them new homes. Through their networking, René became involved with animal legislation, which raised her awareness about the many issues pertaining to animals. This led her to the AR2007 Conference, where she learned that by going vegan, she could save about 95 animals per year. René is thrilled that she now has a comprehensive and holistic approach to help animals.

Regarding her journey to veganism, she says, "I remember every seed that was planted. The first was when I house-sat for my friend's mom. I spent several days with her two dogs, and issues of The Animals' Voice and PETA magazines. The images there haunted me, and never left. Also, my best friend in networking, Dee Dee, is a vegan. When I met a new friend at AR2007, I was ripe for encouragement, and, voilà. I'm now sending out huge thank-yous to my husband Jim, The Animals' Voice, PETA and my friends mentioned here."

René uses her art and music to benefit animals and help with their rescue. She is setting up a support website at www.notborntodie.org.
