Spanish study reveals new evidence about the health
benefits of virgin olive oil. The findings, explained
in the August issue of the American Journal of Clinical
Nutrition,
note that virgin olive oil can help ward off harmful
blood clots in people with high cholesterol. Researchers
attribute this to phenols, substances found in the
oil proven to have beneficial effects
on the heart.
The study examined the effects of eating different kinds of olive oil in individuals with high cholesterol. The analysis showed lower concentrations of a blood clotting antigen in individuals that consumed olive oils with higher levels of phenol. Extra virgin oil has the highest levels of phenol.
