Caliente Kebabs

If you’re not already a broccoli fan, then think twice! This vegetable can be prepared to perfection and help keep your body’s defenses strong. Broccoli contains powerful compounds, called phytonutrients, which work to fight off cancer. It’s also an excellent source of A, C and K vitamins, folic acid, fiber and potassium. Try these flavorful Caliente Kebabs along with your favorite fresh veggies before the summer is over.

Ingredients:

Marinade:
4 oz. rice vinegar
8 oz. vegetable oil
1 oz. garlic, fine chopped
2 tsp. dried thyme
1 Tbs. sea salt
1/2 tsp. pepper

Vegetables:
12 white mushrooms
12 cherry or grape tomatoes
12 large broccoli florets
12 large cauliflower florets
1 large bell pepper, sliced into 12 pieces
1 large onion, cut into 12 pieces
6 oz. zucchini
6 oz. yellow squash

Directions:

  1. Combine the marinade ingredients and set aside.
  2. Cut zucchini and squash to 1/2" semi circles.
  3. Blanch & refresh zucchini, squash, onion, cauliflower, broccoli & pepper. To blanch, briefly submerge in boiling water, then plunge immediately and briefly into ice cold water.
  4. Drain thoroughly, and mix with mushrooms into marinade. Allow to soak for 30-45 minutes.
  5. Spear onto soaked bamboo skewers (with tomatoes, witch were not blanched).
  6. Grill at high heat until done, turning frequently.

Broccoli Fights Cancer

Men who regularly eat broccoli and cauliflower have a reduced risk of prostate cancer, according to a recent study in Toronto. Researchers carried out a large screening trial of 1,300 patients with cancer. Detailed questionnaires revealed that broccoli and cauliflower are better than any other vegetables at protecting against aggressive tumors. A weekly serving of cauliflower is associated with 52% reduced risk of cancer while broccoli cut the risk by 45%.

The researchers note that broccoli and cauliflower were known to contain anti-cancer compounds. They advise that the best way to reduce cancer risk is to eat a balanced diet, including lots of fruit and vegetables.

Providing a Voice for Animals

Animal Rights Foundation of Florida (ARFF) is an active group in Orlando, FL launched by two very inspiring individuals: Carla and Bryan Wilson. They were not vegetarians when they attended the March for Animals and the Animal Rights National Conference in 1996, but after watching a video about slaughter methods, they both went vegetarian and turned into animal activists on the spot. A year later they celebrated their first vegetarian and cruelty-free anniversary by visiting Farm Sanctuary. There, Carla and Bryan went vegan!

On a weekly basis ARFF hits the pavement in busy parts of town to educate others, equipped with a video display and information about a vegan diet. Bryan often educates children about adopting a vegetarian diet, speaking in schools throughout central Florida. In honor of World Farm Animals Day in October, ARFF will show the movie Peaceable Kingdom and encourage members to write letters to the editor.
