A
new study pinpoints vitamin E as the key to maintaining
physical strength throughout the golden years of
life. The three year study, conducted by researchers
at Yale University School of Medicine, examined vitamin
levels of nearly 700 volunteers over the age of 65.
Study participants with lower vitamin E levels performed
worse on tests of basic physical ability. Researchers
note that the odds of declining in physical function
were 1.62 times greater than people with higher vitamin
E levels.
Vitamin E is an antioxidant that protects the body’s tissues from damage caused by free radicals. It also plays a role in the formation of red blood cells. Vitamin E can be found in many plant-based foods such as wheat germ, soy, nuts, seeds, olives, and green leafy vegetables like spinach and asparagus. "Good nutrition can have a profound impact on healthy life expectancy and a good diet can help improve the quality of life in older adults," commented Claire Williamson, a nutrition scientist at the British Nutrition Foundation.

out to eat with friends can be fun, but for a teen vegetarian,
it can also be a little complicated… especially

high school senior Rebecca Collins from sticking to
her convictions. A vegetarian for more than three years,
Rebecca has had plenty of opportunities to fine-tune
her dining experiences and has never regretted the lifestyle
change. She says, “The benefits outweigh the inconveniences… vegetarianism
is much healthier than a diet that includes meat, and
being a vegetarian has made me try a variety of healthier
foods.” Being veg continues to get easier too,
since an increasing number of restaurants are now offering
a variety of options.
Rebecca explains that she chose this lifestyle because she did not want to eat defenseless animals. Her compassionate decision taught her responsibility because she needed to take charge of her meals. “Studies show that diet choices made when you’re younger are more likely to stick when you’re older, so becoming a vegetarian when you’re a teen can help you stick with it for the rest of your life” revealed the smart teenager.
