Breaded Tofu Cutlets & Gravy

Create great meals throughout the winter without compromising your health! Even if the weather has you craving a heavier menu, you can eat hearty without saturated fat or cholesterol. Try these Sensational Breaded Tofu Cutlets. Serve them up with Majestic Mushroom Gravy, mashed potatoes and veggies for a real down-home meal.

Ingredients:

1/2 cup Vegenaise (product below)
1/2 cup whole wheat bread crumbs
28 oz. extra firm tofu
virgin olive oil

Gravy:
4 Tbs. virgin olive oil
4 Tbs. spelt flour
2 cups water
1 pound mushrooms, sliced
2 tsp. vegetable bouillon
2-3 Tbs. soy sauce

Directions:

  1. Sprinkle olive oil on one or two baking dishes.
  2. Drain water out of tofu and cut into slices about 1/2” thick; dip tofu in bowl of Vegenaise to coat thoroughly, then coat with bread crumbs; layer breaded tofu in baking dish.
  3. Sprinkle olive oil over tofu when done laying tofu in baking dishes.
  4. Cover with foil and bake at 350 F for 45 minutes, uncover and bake for extra 10 minutes.
  5. In a pot on the stove combine olive oil and flour, add a small bit of water and stir to get the lumps out of the flour.
  6. Add the rest of the water, vegetable bouillon, mushrooms, and soy sauce; stir and bring to a boil, then simmer about 5-10 minutes or until mushrooms are cooked.
  7. Serve over the tofu cutlets.

* Try double-dipping the tofu for a thicker coat of bread crumbs on the tofu.

Whole Grains Lower Diabetes

A new study reveals that diets high in whole grains not only help people lose weight, but also stave off diabetes and cardiovascular disease. Researchers at Penn State tracked 50 obese people, 25 men and 25 women, between the ages of 20 and 65 years, who were predisposed to diabetes and cardiovascular disease.

Over a period of 12 weeks, both groups received the same advice on weight loss and exercise. The was one key difference. Every grain the first group ate was refined, like white flour. The other group couldn't touch a grain unless it was whole, like oatmeal, whole grain cereal, brown rice, whole-wheat pasta, granola bars, popcorn, and whole-wheat crackers.

By the end of the study, participants in both groups had dropped an average of 8 to 11 pounds. However, the whole grain group lost more weight in the abdominal region. Even better, the whole grain group experienced a 38 percent decrease in its C-reactive blood protein (CRP) levels. CRP is an indicator of vascular inflammation and is considered a precursor to diabetes and cardiovascular disease. The refined grain group experienced no decrease in CRP levels.
