Studies
have shown that grilling and broiling meats produce
carcinogens (cancer-causing agents), providing
yet another reason to opt for veggies. A recent study
published in Nutrition
and Cancer reveals the carcinogen PhIP (a heterocyclic
amine known to cause DNA damage leading to cancer)
to be pervasive in grilled chicken products.
"Grilled chicken is the largest source of PhIP," says Kristie Sullivan, M.P.H., lead author of a new study and a toxicologist with the Physicians Committee for Responsible Medicine. "You don't want fried chicken, obviously, with all its fat and cholesterol, but it turns out that grilled chicken is peppered with chemicals clearly linked to cancer," Sullivan added, "We found this carcinogen in every single sample of grilled chicken taken from restaurants in every part of California."

Veteran and vegan Joseph Hayes is a member of Veterans
For Peace (VFP), a non-governmental national organization
of veterans of all eras and duty stations, whose collective
experience tells them “wars are easy to start
and hard to stop and that those hurt are often the
innocent. Thus, other means of problem solving are
necessary.”
Joseph wrote about his experiences at a DC Peace March and Demonstration in his essay, “Our Peace Odyssey.”
He joined the vegan ranks when, at age 50, his mid-life crisis urged him to do something significant with his life. “I examined my diet, and decided to go vegetarian.” After just one week, he went vegan! When he learned about factory farming, Joseph recalls, “It disturbed me so much, I knew I’d never go back to eating that way again,” adding “I’m satisfied with a vegan diet, and not being part of that cruelty."
Joseph also hosts a monthly radio show in Grand Junction, CO called "Vegetarian Stew," an interview program devoted entirely to vegan/vegetarian issues. It airs the second Thursday of each month at 12:30pm Mountain time and can be listened to worldwide at www.kafmradio.org.
