Snowball Cookies

Sweet holiday goodness! These Snowball Cookies (also known as Mexican Wedding Cakes) are a holiday classic. They are so simple to make, yet classy enough for any holiday gathering. Make a batch for friends, for the office gang, or pop some in the oven and spend a warm, quiet night at home savoring the melt-in-your-mouth deliciousness.

Ingredients:

1 cup shortening
2 cups flour
1/4 c. agave nectar
1/2 tsp. almond extract
1/2 tsp. salt
2 cups pecans, chopped fine
powdered sugar for coating

Directions:

1. Cream shortening.
2.
Add other ingredients.
3. Roll mixture into small balls.
4. Bake for 30 minutes at 300°F.
5. Roll in powdered sugar while hot and again when cold.

Makes about 30 cookies.

Compassionate Gift Giving

Renowned author, public speaker, and dedicated animal advocate Colleen Patrick-Goudreau shares this holiday-inspired video to help others give and receive gifts as a joyful vegans. In it she covers establishing open communication, creating compassionate gifts, receiving non-vegan gifts, and more.
